Thinly cut some potatoes.

Layer a bunch of bacon in a 13-inch loaf pan, overlapping the strips, using two packs of bacon to cover the pan.

Start layering the thinly cut potatoes.

Season the potatoes with Cajun seasoning or seasoning of your choice.

Add a handful of diced onions.

Cover that layer in sliced cheddar cheese.

Add another layer of potatoes.

Add a 1/2 pound of breakfast sausage, spreading it out and flattening it down.

Repeat the entire layering process once again.

Fold over the bacon, making sure to tuck it into the sides.

Bake at 400° Fahrenheit for 2 hours.

When it comes out, let it cool for a few hours or even overnight for easy slicing and portioning.

Slice out pieces however thick you want.

When ready to eat, pan fry each side for about 2 to 3 minutes.
