Directions

  1. 1Thinly cut some potatoes.
  2. 2Layer a bunch of bacon in a 13-inch loaf pan, overlapping the strips, using two packs of bacon to cover the pan.
  3. 3Start layering the thinly cut potatoes.
  4. 4Season the potatoes with Cajun seasoning or seasoning of your choice.
  5. 5Add a handful of diced onions.
  6. 6Cover that layer in sliced cheddar cheese.
  7. 7Add another layer of potatoes.
  8. 8Add a 1/2 pound of breakfast sausage, spreading it out and flattening it down.
  9. 9Repeat the entire layering process once again.
  10. 10Fold over the bacon, making sure to tuck it into the sides.
  11. 11Bake at 400° Fahrenheit for 2 hours.
  12. 12When it comes out, let it cool for a few hours or even overnight for easy slicing and portioning.
  13. 13Slice out pieces however thick you want.
  14. 14When ready to eat, pan fry each side for about 2 to 3 minutes.
