Ciabatta bread

Directions

  1. 1Pour water in a glass baking form.
  2. 2Pour olive oil.
  3. 3Mix water and olive oil with a spatula.
  4. 4Add flour.
  5. 5Mix the ingredients with a spatula.
  6. 6Add herbs on top of the mix.
  7. 7Close the lid and set the timer for 30 minutes.
  8. 8Stretch and fold each corner of the dough and let it rest for another 30 minutes.
  9. 9Repeat the stretching and folding and allow to rest for another 30 minutes.
  10. 10Flour the surface and take out the dough.
  11. 11Cut the dough in rectangle shapes.
  12. 12Form the breads and place them in a baking tray.
  13. 13Bake until golden brown and crispy.
  14. 14Slice and serve.

Ingredients

  • 325 ml lukewarm water
  • 3 g fast action yeast
  • 50 ml olive oil
  • 425 g strong bread flour
  • 10 g salt

Tips

  • Use a container with a lid to make the ciabatta dough, it speeds the proving process.
  • Water should be warm, once you’ve added all of the ingredients, use a spatula to bring it together the dough will be quite sticky.
  • Allow the dough to rest for 30mins in a warm place.
  • After the 30 mins, dip your hands in water to avoid sticking and bring the dough together stretching and folding each corner of the dough.
  • Rest for another 30mins
  • Repeat the stretching & folding again and allow to rest for another 30 mins.
  • Make sure you flour the surfaces well, then use a floured bench scraper or a knife to cut the dough into rough rectangle shapes.
  • Transfer to a baking tray and allow to rest for 15 mins in the tray then bake until golden brown and crispy!
