Mexican Wet Beef Burrito with Green Sauce

Directions

  1. 1Preheat oven to 350°F.
  2. 2In a large skillet over medium heat, cook the ground beef until fully browned.
  3. 3Drain excess fat.
  4. 4Add chopped onion and cook for about 5 minutes until softened.
  5. 5Stir in minced garlic and cook for 30 seconds until fragrant.
  6. 6Add cumin, chili powder, salt, and pepper. Stir well to evenly season the meat.
  7. 7Remove from heat and transfer mixture to a large bowl.
  8. 8Stir in the refried beans until fully combined and creamy.
  9. 9In a blender, combine green enchilada sauce, chopped cilantro, lime juice, and jalapeño if using.
  10. 10Blend until smooth and vibrant.
  11. 11Lay a flour tortilla flat on a clean surface.
  12. 12Spoon a generous portion of the beef mixture into the center.
  13. 13Sprinkle with shredded cheese.
  14. 14Fold in the sides and roll tightly into a burrito.
  15. 15Repeat with remaining tortillas.
  16. 16Place burritos seam-side down in a greased baking dish.
  17. 17Pour the green sauce generously over the top, fully covering them.
  18. 18Sprinkle additional cheese over the sauce if desired.
  19. 19Bake for 20–25 minutes until cheese is melted, bubbly, and slightly golden.
  20. 20Remove from oven and let rest for 5 minutes.
  21. 21Serve hot topped with sour cream, avocado or guacamole, and fresh cilantro.

  • 1 jalapeño, chopped
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Sour cream
  • Sliced avocado or guacamole
  • Extra chopped cilantro
