Aloha Chicken and Rice Bake

Directions

  1. 1Start by adding one and a half cups of minute rice to your baking dish.
  2. 2Then add two cubed chicken breasts, which is about a pound.
  3. 3Add one diced red bell pepper.
  4. 4Add half of a red onion, diced as well.
  5. 5Add one 20 oz can of pineapple tidbits and juice.
  6. 6Mix all the ingredients in the baking dish together.
  7. 7To make the sauce, start with three quarters of a cup of chicken broth.
  8. 8Add a half a cup of coconut aminos or soy sauce.
  9. 9Add a quarter cup of brown sugar.
  10. 10Add three or four minced garlic cloves.
  11. 11If you have any fresh ginger, grate some of that in there too.
  12. 12Whisk the sauce ingredients until beautifully combined.
  13. 13Pour your sauce on top of everything else in the baking dish.
  14. 14Cover the whole thing with foil.
  15. 15Throw it in the oven at 425° for about 50 minutes.
  16. 16When it comes out of the oven, carefully remove the foil and check to make sure there isn't still too much liquid.
  17. 17If there is too much liquid, put the foil back on and throw it back in the oven.
  18. 18If you have some fresh cut green onions, sprinkle them on top to make it look fancy.
  19. 19Grab a bowl, fill it up, get a fork, scoop up a big bite, and enjoy.
