Mix melted shortening with sugar.

Add the egg.

Stir in the molasses.

Gradually add flour and spices.

Chill for 5 minutes in freezer.

Roll dough into small walnut-sized balls and place on an ungreased cookie sheet, spacing them apart.

Bake for 8-9 minutes until they JUST cracked on top (if you like them crunchier, then bake 10-11 minutes).

0.5 CUP melted shortening
1 CUP sugar
1 egg
0.5 CUP molasses
2 CUPS sifted all-purpose flour
1 TSP soda
1 TSP ginger
1 TSP cinnamon
0.5 TSP salt

Tips
Chill the dough for 5 minutes in the freezer before baking.
Take the cookies out just as they crackle on top to keep them chewy.
Bake for 8-9 minutes until they JUST cracked on top (if you like them crunchier, then bake 10-11 minutes).
Remove from cookie sheet to rack quickly otherwise cookies will become too hard.
