Chewy Ginger Cookies

Directions

  1. 1Mix melted shortening with sugar.
  2. 2Add the egg.
  3. 3Stir in the molasses.
  4. 4Gradually add flour and spices.
  5. 5Chill for 5 minutes in freezer.
  6. 6Roll dough into small walnut-sized balls and place on an ungreased cookie sheet, spacing them apart.
  7. 7Bake for 8-9 minutes until they JUST cracked on top (if you like them crunchier, then bake 10-11 minutes).

  • 1 CUP sugar
  • 1 egg
  • 0.5 CUP molasses
  • 2 CUPS sifted all-purpose flour
  • 1 TSP soda
  • 1 TSP ginger
  • 1 TSP cinnamon
  • 0.5 TSP salt

Tips

  • Chill the dough for 5 minutes in the freezer before baking.
  • Take the cookies out just as they crackle on top to keep them chewy.
  • Bake for 8-9 minutes until they JUST cracked on top (if you like them crunchier, then bake 10-11 minutes).
  • Remove from cookie sheet to rack quickly otherwise cookies will become too hard.
