Mississippi Roast Sandwiches

Directions

  1. 1Grab your Instant Pot and set it to sear.
  2. 2Season the beef rump roast on all sides with salt, pepper, and garlic seasoning.
  3. 3Add a little bit of bacon up to the bottom of the Instant Pot.
  4. 4Lay the seasoned roast into the Instant Pot, pressing down. Sear for 2 minutes on each side until it has a good color.
  5. 5Add a couple of tablespoons (or as much as you like) of minced garlic.
  6. 6Add a couple of tablespoons of Worcestershire sauce.
  7. 7Mix to deglaze the pan.
  8. 8Add 2 cups or half a container of beef broth.
  9. 9Add onion powder, a spoonful of pepperoncinis, and about a tablespoon of the pepperoncini juice.
  10. 10Add one au jus packet.
  11. 11Cover the Instant Pot and pressure cook for about 2 hours to make the meat shreddable.
  12. 12After 2 hours, let the natural pressure release.
  13. 13Use a masher to mash up the cooked roast in the pot.
  14. 14Toast the deli sub buns in the oven with butter or mayonnaise until nice and toasty.
  15. 15Place provolone cheese on the buns.
  16. 16Add the shredded Mississippi roast to the buns.
  17. 17Place the sandwiches under the broiler just long enough to melt the cheese and give it a little color.

Tips

  • You can use a chuck roast or any other roast.
  • You can use a crock pot, but it takes 8-10 hours. In an Instant Pot, it takes about 2-3 hours.
  • You can serve the shredded roast over rice instead of on a sandwich.
  • If you like, toast the buns with butter or mayonnaise.
  • Melt the cheese under the broiler to get a little color.
