  1. 1Combine water, yeast, and sugar, and set aside.

  5. 5Divide the dough into two or three pieces, depending on how big or small you want your pizzas.
  6. 6Let this rest for another two to three hours.
  7. 7For the pizza sauce, combine passata, olive oil, salt, sugar, black pepper, and some dried herbs.
  8. 8Once the dough is rested, sprinkle some cornmeal on your surface and start shaping the dough into a large circle while maintaining a crust around the perimeter.
  9. 9Assemble your pizza over the baking tray.
  10. 10When it comes to cheese, use pecorino romano, mozzarella, and fresh mozzarella.
  11. 11Bake for about eight to ten minutes.
  12. 12Top with fresh basil and more cheese, and it's ready to enjoy.
