Generously season chicken chest with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil. Add more seasoning if chicken is still visible.
Finely dice a large shallot.
Crush and roughly chop some garlic.
In a heavy bottom pot over medium-high heat, add a generous amount of olive oil.
Carefully lay in your seasoned chicken. If the pot isn't big enough, do a couple of batches to avoid overcrowding.
Once the chicken is fully cooked, remove it from the pot and either chop or shred it.
Add a little more olive oil to the pot, then add the chopped garlic and shallots.
Squeeze in a little bit of tomato paste.
Add in a little bit of sun-dried tomatoes.
After a few minutes, add in a whole lot of chicken stock.
After about 15 minutes, add in heavy cream and a good amount of Parmigiano cheese.
Let the soup simmer to thicken up.
After about 20 minutes, salt to taste.
Add in cold butter, your cooked chicken, gnocchi, and a handful of spinach.
Cover and let it cook for 5 minutes.
