Serves 10

Directions

  1. 1Pre-heat the oven to 325 F (163 C).
  2. 2Mash the bananas up really well.
  3. 3In a large mixing bowl, mix together the mashed bananas, water, vanilla extract, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg and chocolate chips.
  4. 4Add in the vital wheat gluten and combine. Do not over-mix, as it creates a chewier texture.
  5. 5Place the dough in a parchment paper-lined loaf pan and spread it out as evenly as possible.
  6. 6Cook until you pass the clean toothpick test.

Ingredients

  • 3 whole banana
  • 180 g vital wheat gluten
  • 1/2 cup light brown sugar
  • 2 tbsp water
  • 1 tbsp vanilla extract
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 1/2 tbsp mini chocolate chips

Equipment

large mixing bowlloaf panparchment paper

Tips

  • The dough should be a little loose but able to form a cookie shape; it should not be wet and sloppy.
  • If the dough is wet and sloppy, add a bit of extra vital wheat gluten until the consistency is correct.
