Tuscan Chicken & Alfredo Rice

Directions

  1. 1Season 2 pounds of chicken breast with smoked paprika, onion powder, garlic powder, salt, pepper, and Italian seasoning.
  2. 2Mix the seasonings into the chicken breasts by hand.
  3. 3Air fry or grill the seasoned chicken.
  4. 4Chop the cooked chicken into cubes and set aside.
  5. 5Prepare the sauce by combining reduced-fat cream cheese, fat-free cottage cheese, Parmesan, 2% evaporated milk, chicken broth, onion powder, Italian seasoning, 1 clove of garlic, and Kraft mac & cheese powder.

  7. 7Spray a pan with cooking spray.
  8. 8Sauté some white onion and garlic in the pan.
  9. 9Add half a cup of chicken broth to the pan.
  10. 10Throw in fresh spinach into the pan.

  12. 12Add 56 grams of reduced-fat cheddar cheese to the sauce.
  13. 13Add 3 cups of already prepared Minute Rice to the pan.
  14. 14Cook on low heat and stir until the cheese melts.
  15. 15Add the chopped chicken and sun-dried tomatoes to the mixture.

  • 40 g sun-dried tomatoes
