Directions

  1. 1Melt caster sugar until golden, pour into ramekins, sprinkle with lavender flowers, and cool.
  2. 2Heat milk in a pan until steaming.
  3. 3Whisk eggs, vanilla seeds, and lavender sugar together.
  4. 4Gradually pour hot milk into the egg mixture while whisking.
  5. 5Place ramekins in a roasting tin lined with a cloth, add boiling water around them, and bake in a preheated oven for 30 minutes.
  6. 6Cool in the fridge before serving.

Tips

  • Line the roasting tin with a cloth to prevent the ramekins from jiggling.
  • Dip ramekins in hot water to loosen the crème caramel for serving.
