4Heat pan to high heat, add cooking oil, and sauté garlic and beef until 90% cooked through.
5Add noodles to the pan and cook for 2-3 minutes to char.
6On medium-high heat, scramble eggs until 80% done and toss with noodles and beef.
7Add Chinese broccoli and sauce, mixing until evenly coated.
Ingredients
1/2-1 lb flank steak
1 tbsp oyster sauce
1/2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp sugar
1/2 tsp ground black pepper
1/4 tsp baking soda
2 lb fresh rice noodles, wide cut
1/2 tbsp dark soy sauce
1/2 lb chinese broccoli, sliced on a bias to 1/4 inch thickness
3 whole eggs
2 tbsp oyster sauce
1 tbsp sweet soy sauce
1 tbsp dark soy sauce
1 tbsp sugar
1/2 tbsp soy sauce
1/2 tbsp seasoning sauce
1 tsp ground black pepper
2-3 tbsp cooking oil
Tips
Steam Chinese broccoli with a splash of water in the microwave for 1 minute, uncovered, as an optional step.
Use soy sauce if seasoning sauce is unavailable, though seasoning sauce provides better flavor.
Try not to break up noodles too much when mixing by scooping and lifting.
