Which cup does this use?
The US customary cup, 236.6 ml, which is the one American recipes mean. A UK or Australian metric cup is 250 ml, about 6% larger, and a Japanese cup is 200 ml. If your recipe is metric, type the millilitres in directly.
Why is my cup of flour heavier than 120 g?
Because of how you filled it. Scooping straight from the bag compacts the flour and can give you 145 g or more; the standard 120 g assumes you spooned it in and levelled it off. That 20% swing is the reason bakers weigh instead of scooping, and it is why halved and doubled recipes go wrong so often.
Are these conversions exact?
They are the standard US baking-reference values, and each ingredient page says how the cup was filled to get its number. For liquids and sugars they are good to within a gram or two. For anything fluffy or packable, like flour, brown sugar or grated cheese, measuring by volume carries more error than the conversion does.
