Modeling Chocolate

Directions

  1. 1Measure out 6 ounces of candy melts using a scale.
  2. 2Put the candy melts in the microwave for one minute, then stir well.
  3. 3Put the melted candy melts back in the microwave in 30-second increments until completely melted.
  4. 4Add oil-based food coloring to the melted candy melts to reach the desired color.
  5. 5Add two tablespoons (or one fluid ounce) of light corn syrup.
  6. 6Mix well until a Play-Doh-like consistency is formed. This sets up quickly, so work fast.
  7. 7Remove the mixture from the bowl and place it on a piece of saran wrap.
  8. 8Fold the saran wrap over the mixture and press it flat.
  9. 9Let the mixture rest at room temperature for about an hour or overnight.
  10. 10Knead the modeling chocolate until it becomes soft and supple. Add fondant for more stretch if needed.
  11. 11Store the modeling chocolate in sealed Ziploc bags to keep it from hardening.
  12. 12Cut a portion of modeling chocolate and microwave it for 5 seconds before using it in silicone molds.
  13. 13Press the warmed modeling chocolate into silicone molds and let it set for a few minutes.
