Slice a block of softened room temperature cream cheese into long large logs.

Carefully spread a layer of coarse sugar (or turbinado sugar) on a cutting board or surface.

Roll out the thawed puff pastry sheet directly onto the sugar to ensure the sugar sticks directly to the dough and to remove any creases.

Cut the puff pastry sheet into 4 large squares.

Layer cream cheese logs in the middle of each square.

Brush egg wash (1 large egg + a splash of water) on the corners of each square.

Fold the pastry onto itself corner to corner, creating a cannoli-like shape.

Brush the outside of each rolled pastry with egg wash.

Sprinkle more coarse sugar on the outside of each pastry.

Transfer each pastelito onto a baking sheet lined with parchment paper.

Bake at 400°F for 20 minutes until golden brown and slightly caramelized on the bottom.

While baking, prepare the glaze by boiling 1/2 cup sugar and 1/2 cup water in a small saucepan for 5 minutes.

Once baked, give each pastelito a light brush of the prepared glaze over top.
