Pastelitos de Queso (Cream Cheese Pastries)

Directions

  1. 1Slice a block of softened room temperature cream cheese into long large logs.
  2. 2Carefully spread a layer of coarse sugar (or turbinado sugar) on a cutting board or surface.
  3. 3Roll out the thawed puff pastry sheet directly onto the sugar to ensure the sugar sticks directly to the dough and to remove any creases.
  4. 4Cut the puff pastry sheet into 4 large squares.
  5. 5Layer cream cheese logs in the middle of each square.
  6. 6Brush egg wash (1 large egg + a splash of water) on the corners of each square.
  7. 7Fold the pastry onto itself corner to corner, creating a cannoli-like shape.
  8. 8Brush the outside of each rolled pastry with egg wash.
  9. 9Sprinkle more coarse sugar on the outside of each pastry.
  10. 10Transfer each pastelito onto a baking sheet lined with parchment paper.
  11. 11Bake at 400°F for 20 minutes until golden brown and slightly caramelized on the bottom.
  12. 12While baking, prepare the glaze by boiling 1/2 cup sugar and 1/2 cup water in a small saucepan for 5 minutes.
  13. 13Once baked, give each pastelito a light brush of the prepared glaze over top.
