1Prepare the rice: In a measuring cup, mix 1 cup of water, 1 tsp of tomato bouillon, and 1 cup of instant rice. Microwave for 6 minutes.
2Prepare the chicken: Season the chicken pieces with fajita seasoning and paprika. Air fry at 400° for 5 minutes, flip, and air fry for another 5 minutes.
3Prepare the sauce: In a bowl, mix 1 TBS of light cream cheese, 2 TBS of Greek yogurt, ½ tsp of fajita seasoning, and green chiles to taste.
4Add the sauce to the chicken and top with a sprinkle of quesadilla cheese. Air fry at 400° for 5 more minutes.
5Serve the chicken over the rice and drizzle with extra sauce if desired.
