Carrot Cake Overnight Oats
Directions
- 1Combine plant-based milk, yogurt, maple syrup, cinnamon, nutmeg, ginger, and salt in a bowl.
- 2Add rolled oats, chia seeds, chopped pecans or walnuts, and grated carrots to the bowl and mix.
- 3Let the mixture sit for about 10 minutes.
- 4Divide the mixture into glass jars.
- 5Top with peanut butter and extra pecans.
