Directions
1
Take your Mandarin and start peeling it.
2
Separate the peeled mandarin into individual segments.
3
Drop the segments into some hot water, just below boiling (this is called tea water).
4
Remove your segment from the water.
5
Using a paring knife or bird's beak knife, simply scrape the fibers off the segment.
6
Use the tip of the knife to take out any deeper fibers, making sure to get all the edges and sides until your segment is clean.
7
If you have a small Mandarin, you can add the whole thing to the hot water.
8
Clean the whole mandarin exactly the same way, just being more gentle.
Ingredients
Mandarin
Hot water
Equipment
Paring knife
Bird's beak knife
Bowl
Tips
The mandarin only needs to be in the water for a few seconds (but you can leave it as long as you need).
Don't be afraid to scrape the segment!
You don't actually have to be too careful with this as long as you're not popping the segment.
Making sure to get all the edges and sides of the membrane is important for a perfectly clean piece of citrus.
