Start by blending a cup of bulgar, with half an onion, a tomato, a huge bunch of basil and mint, a tablespoon of cumin seeds, a teaspoon of dried mint, a whole stick of cinnamon, a tiny drizzle of olive oil, and a pinch of salt.
Once it's nicely mixed, finely chop the other half of the onion and three juicy tomatoes.
Add everything to a bowl with a tablespoon of tomato puree and knead everything until properly mixed.
Let it cool for 30 minutes in the fridge.
Then serve it on a plate, top it with a drizzle of olive oil.
Have it with some bread, a fork, or some slices of onions.
