Homemade Seitan

Directions

  1. 1Add water to the flour in a wooden bowl and mix until you form a dough.
  2. 2Wash the dough under running water in a sink until all the starch is gone and you are left with just the protein.
  3. 3Add red onion, thyme, fennel seeds, and bay leaf to a pot of water.
  4. 4Stretch the dough, cut it, and braid it into knots.
  5. 5Add the braided dough to the pot with the broth and boil until doubled in size.
  6. 6Drain the seitan and cut it into small pieces.
  7. 7Pan-fry the seitan pieces with garlic.
  8. 8Add the sauce to the seitan.
