French Onion Casserole

Directions

  1. 1Peel onions and slice using a mandolin.
  2. 2Add chopped thyme, salt, and black pepper to the onions, mixing well with your hands.
  3. 3In a small pot, heat beef better than bouillon and heavy cream until it reaches a boil, then remove from heat and stir in Dijon mustard.
  4. 4Let the onion mixture sit for 10 minutes, then use a paper towel to remove any excess moisture.
  5. 5Layer the onions into a baking dish, pour the cream mixture over them, top with Gruyère cheese, and dot with butter.
  6. 6Cover and bake at 325 degrees for 45 minutes.
  7. 7Remove the foil and bake at 325 degrees for another 30 minutes.
  8. 8Let the casserole sit for 5 minutes before serving.
