Homemade Beef Sticks

Directions

  1. 1Mix all ingredients together really well using a stand mixer.
  2. 2Roll the mixture between parchment paper until about 2–3 mm thick.
  3. 3Cut the mixture into strips roughly 1 cm wide by 6 cm long.
  4. 4Refrigerate overnight to cure.
  5. 5Bake on the parchment at 275°F for about 1 hour.
  6. 6Cool until you can handle them, break the sticks apart, blot with paper towels, and refrigerate or freeze.

  • 1 lb ground beef
  • 2 tsp morton tender quick
  • 1/4 tsp garlic salt
  • 1/2 tbsp mustard seed
  • 1/2 tbsp liquid smoke
  • 1/2 tbsp granulated sugar
  • 1 tsp coarse black pepper

Tips

  • Use a chef’s knife or bench scraper to cut; press straight down and back up rather than dragging the blade through the meat.
  • Store in the refrigerator or freezer.
  • Freeze by layering flat in a quart-size freezer bag.
  • They thaw quickly, making them suitable to take from the freezer in the morning and have thawed by lunch.
