2Add 2 and a half cups of roasted and unsalted cashews to the bowl.
3Add 1 cup of roasted and unsalted almonds to the bowl.
4In a separate measuring cup, mix two egg whites, two tablespoons of water, and two teaspoons of vanilla extract.
5Pour the liquid mixture over the nuts and toss to coat.
6In another bowl, add one cup of brown sugar, one cup of granulated sugar, two tablespoons of cinnamon, two teaspoons of kosher salt, and a little bit of fresh grated nutmeg.
7Mix the dry ingredients together.
8Transfer the nuts into a bigger bowl (or storage bowl if you don't have a bigger bowl).
9Pour the sugar and spice mixture over the nuts.
10Toss everything together until well combined.
11Pour the mixture onto a baking sheet lined with parchment paper.
12Spread the nuts in a nice and even layer.
13Bake the nuts at 300

Tips
If using regular table salt, use just 1 to 1.5 teaspoons.
If your pan isn't big enough for a nice and even layer, split the mixture between two pans.
