Serves 1

Directions

  1. 1Place unwashed farm-fresh eggs into a large glass jar, keeping them pointy side down as much as possible.
  2. 2Mix pickling lime with water in a separate container.
  3. 3Pour the pickling lime solution over the eggs until they are completely submerged by about two inches of liquid.

Ingredients

  • as needed farm-fresh unwashed eggs
  • as needed water
  • 1/4 cup pickling lime

Equipment

large glass jarcontainerwooden spoon

Tips

  • Only use unwashed farm-fresh eggs; store-bought eggs cannot be used for this method.
  • Keep eggs pointy side down to maintain freshness for longer.
  • This method is great for scrambled eggs or baking, but the whites/yolks may not be suitable for frying eggs sunny-side up.
  • The eggs are good for up to 18 months.
