Start by sauteing your finely chopped onions until it's soft and golden.

Then set it aside to cool.

In a bowl, combine ground beef and pork.

Add the cooled onions, one beaten egg, panko breadcrumbs soaked in a bit of milk, salt, pepper, and just a pinch of nutmeg.

Add mayonnaise as a hack to keep the meat juicy.

Mix it gently enough to bring it together without overworking it.

Form the mixture into patties.

Sear both sides of the patties until they are nice and golden brown.

Set the patties aside.

Use the same pan to make your sauce.

Add two tablespoons ketchup, one tablespoon Worcestershire, and one tablespoon soy sauce to the pan juices.

Mix the sauce up and pour it over the patties.

Serve the Hambagu with warm rice, maybe some shredded cabbage.

Mayonnaise is commercially emulsified fat so it's going to actually help keep that meat juice inside while you cook it.
