1Cut chicken thigh into 1" pieces and marinate with soy sauce, ginger, garlic, white pepper, and shaoxing wine for at least 30 minutes or up to overnight.
2Before frying, add an egg white and mix through.
3Use coarse sweet potato flour and pack the chicken well.
4Fry chicken at 350F for 3-4 minutes.
5Add fresh basil and fry for 30 seconds.
6Drain chicken and basil.
7Mix together your seasoning and sprinkle it on while the chicken is piping hot.
