1Combine cottage cheese, parmesan cheese, tomato sauce, chipotle peppers, adobo sauce, garlic, and fat-free milk in a blender. Blend until smooth. Cover and set aside.
2Dice 24oz of lean steak into 1-inch cubes. Transfer to a bowl and season with garlic salt and black pepper.
3Cook the seasoned steak in a hot pan with a little bit of cooking spray in small batches until browned on both sides. Add light butter and mix.
4Cook 8 oz of pasta. Add to a bowl along with the chipotle sauce and mix until noodles are coated.
5Top the pasta with the cooked steak and fresh chives.
