1Prepare the meringue: In a bowl, beat egg whites with lemon juice and sugar until stiff peaks form.
2Prepare the pastry cream: In a separate bowl, beat egg yolks with sugar until pale and thick. Add mascarpone cheese and mix. Fold in the whipped egg whites and flour gently.
3Pipe the pastry cream onto a baking sheet lined with parchment paper, forming ladyfingers.
4Bake the ladyfingers in the oven at 180C until golden brown.
5Prepare the cherry sauce: In a pan, combine cherries and sugar, add lemon juice. Cook until the cherries soften and the sugar dissolves. Puree with an immersion blender.
6Prepare the cream filling: Beat egg yolks with sugar until pale and thick. Add mascarpone cheese and mix. Fold in the whipped cream.
7Assemble the tiramisu: Soak ladyfingers in coffee. Layer ladyfingers in a baking dish, spread half of the cream filling on top, then add half of the cherry sauce. Repeat the layers and finish with the rest of the cream filling.
8Top the tiramisu with the remaining cherry sauce and garnish with fresh cherries.
