1Marinate chicken breast (125g) with 1 tbsp greek yogurt, 1/2 lemon juice, 1/2 tsp dijon mustard, 1/4 tsp minced garlic, a dash of paprika, salt and pepper for 30 mins - 1 hour.
2Coat the marinated chicken in seasoned panko (13-15g panko, 5g parmesan, garlic powder, paprika, salt, pepper).
3Airfry or bake the chicken at 200°C for 15-18 mins (airfryer) or 20-25 mins (oven), flipping halfway.
4Prepare fries: rinse 225-250g of peeled and chopped potatoes until water runs clear. Soak in cold water with baking soda (optional) for 30 mins-1 hour. Pat dry and toss with olive oil (1/2 tsp) and seasoning.
5Airfry fries at 200°C for 15-20 mins, shaking halfway.
