1In a skillet over medium-high heat, brown 1 lb of ground beef. Add all seasonings and chopped onion.
2Once beef is cooked through and onions are softened, drain any grease from the skillet.
3Add Rotel, tomato sauce, minced garlic, beef broth, and uncooked rice to the skillet. Stir well, cover, and cook on medium-low heat for 15-20 minutes, or until the rice is cooked. Stir once halfway through.
4Remove the lid, fluff the rice, and top with shredded cheddar cheese.
5Put in the oven to melt cheese.
6Serve with sour cream, cilantro, and tortilla chips.
