3Prepare cucumber salad: In a container, mix a whole cucumber and sliced daikon, avocado oil, fish sauce, apple cider vinegar, zero calorie sugar replacement, and crushed red pepper. Shake well.
4Prepare bottom spread: Mix Chaboni vanilla yogurt with 2 tbsp of old style mustard.
5Assemble sandwich: Spread bottom spread on ciabatta bread, add the chicken, cucumber salad, and top with another piece of bread.
