Combine flour, salt and sugar in a bowl.

In a measuring glass, combine milk, water, and yeast.

Add vanilla essence to the wet ingredients.

Add lemon zest to the dry ingredients.

Add wet ingredients to dry ingredients and combine to form a dough.

Take the dough out of the bowl and knead for some minutes. Add manteca (butter) once dough is formed and continue kneading.

Place the dough in a bowl, cover, and let rest for half an hour.

Take the dough out of the bowl and roll it flat, about 1-1.5 cm thick.

Use a cutter of about 8 cm to cut out circles from the flat dough.

Grease a baking sheet.

Place the dough circles on the baking sheet, close to each other.

Combine sugar and flour in a bowl.

Brush the dough circles with water.

Add a generous amount of the sugar and flour mix on top of the dough circles.

Bake in a preheated oven at 200° for about 15 minutes.

100 g manteca
300 g azúcar negro
3 cucharadas harina
un poco agua

Tips
For the flour, look for the whitest and most refined flour.
If using margarine instead of manteca (butter), the manteca gives a better result.
