To make crispy caramelized pot roast from leftovers, add the leftover pot roast and some gravy to a cast iron pan.
Bake the pot roast at 425°F for about 35 minutes until it gets nice, crispy, and caramelized.
To prepare a new pot roast, rinse and pat dry the meat.
Season all sides of the meat with onion powder, garlic powder, black pepper, salt, and a little Lawry's seasoning.
Set the Instant Pot to the sear setting and add some olive oil.
Sear all sides of the meat for about 5 minutes.
In a measuring cup, combine one packet of Au Jus gravy mix (or brown gravy) with one cup of chicken broth and a little Lawry's seasoning, then pour it over the seared meat.
Add three garlic cloves, a fourth of a white onion, and one bay leaf to the Instant Pot.
Set the Instant Pot to the slow cooker setting for about 7 hours.
When there are two hours left, add the carrots.
Once cooked, add a cornstarch slurry to thicken the gravy.
