Lemon Squares
Directions
- 1Mix flour, softened butter and powdered sugar into pie dough, type dough into an 8x8 pan, and bake for 15 to 20 minutes until firm.
- 2Press the dough into an 8x8 pan, making sure to build up the edges.
- 3In a bowl, slightly beat two eggs, add granulated sugar, baking powder, salt, lemon juice and lemon rind. Mix with a hand mixer until well combined.
- 4Pour the lemon curd over the hot crust and bake for 15 to 20 minutes, until the filling is firm.
- 5Sprinkle with powdered sugar.
- 6Let cool completely in the refrigerator.
