Core and halve the tomatoes.

Add 1 tsp of cooking oil to a pan and spread it.

Add 6-7 dry red chilies to the pan.

Roast dry red chilies until crispy for 2-3 minutes on low-medium heat.

Remove the roasted chilies from the pan.

Add 7-8 garlic cloves to the pan.

Fry garlic until soft for 5-6 minutes on low heat.

Remove the fried garlic from the pan.

Place 7 small tomatoes in the pan.

Fry tomatoes until lightly charred for 4-5 minutes on low heat.

Transfer the charred tomatoes to a bowl.

Remove the skin from the charred tomatoes by hand.

Break apart the dry red chilies and mix with ¾ tsp salt on a plate.

Mash the garlic cloves into the chili and salt mixture.

Add 3 tbsp of thinly sliced onion to the mixture.

Mix the onion into the chili, salt, and garlic mixture.

Add 3 tbsp of chopped coriander to the mixture.

Mix the coriander into the mixture.

Add the peeled charred tomatoes to the mixture.

Mash the tomatoes and mix everything together by hand.

Add 1 tbsp of mustard oil and mix well.

Serve the Charred Tomato Bhorta.

Add 4-5 chopped tomatoes to a pot.

Add 2 tbsp sliced onion to the pot.

Add 1 tsp salt, ¼ tsp turmeric, and ¼ tsp coriander to the pot.

Squeeze in 2 tbsp of lime juice.

Add 2 tsp of oil to the pot.

Mix all ingredients in the pot.

Pour in 2 ½ cups of water.

Cover the pot with a lid and cook for 6 minutes.

Add 1 clove of garlic.

Add 3-4 green chilies to the pot.

Stir the ingredients.

Cover and cook for another 6 minutes.

Add 2 tbsp of chopped coriander.

Squeeze in 2 tbsp of lime juice.
