Directions

Make cuts in the chicken breasts.

Season the chicken breasts with salt, paprika, black pepper, garlic granules, onion granules, dried parsley, dark soy sauce, and lemon juice.

Coat the chicken with oil spray.

Air fry the chicken at 180°C for 20-25 minutes.

Take 1 tablespoon of oil and fry 1 teaspoon of minced garlic and 2 chopped scallions.

Add 1 teaspoon of paprika, 1 teaspoon of black pepper, and salt to taste to the pan.

Add a splash of water to cook the spices.

Add a handful of baby spinach, 250ml of reduced-fat coconut milk, and 1 tablespoon of light cream.

Cook the sauce for 4-5 minutes.

Flip the chicken pieces, spray oil on the other side, and air fry for another 6-7 minutes.

For coconut rice, take 3 tablespoons of oil and add 1 teaspoon of cumin seeds, half-sliced onion, and 2 chilies.

Fry this for 5 minutes.

Add 1 tablespoon of minced garlic and fry for another 2-3 minutes.

Add 1 teaspoon of coriander powder, 1 teaspoon of red chili flakes, and 1 tablespoon of salt.

Add 1 can (400ml) of reduced-fat coconut milk.

Bring it to a boil.

Add 2 cups of washed basmati rice.

Add some water if needed, so the water is 1 inch above the rice.

Pressure cook for 8 minutes.

Once everything is ready, assemble and enjoy!

2 cups washed basmati rice
