Get all your ingredients ready.

In a pot, melt 1 tbsp butter and add 1 tbsp oil.

Add 1/2 tsp cumin seeds and let it splutter.

Add 4 halved garlic cloves.

Add 1 roughly chopped medium sized onion and saute until onions turn transparent.

Add 3 cups of roughly chopped carrots.

Saute until raw smell leaves (2-3 mins).

Add 2 cups of water.

Once it starts to boil, cook covered until carrots turn soft.

Check by pressing it with a fork. Soft & easily pierced means it is cooked.

Remove the veggies alone using a strainer or skimmer.

Add a little stock water to the pot.

Cool down the removed veggies and grind to a puree. Add it to the pan.

Rinse with 1/2 cup of water and add it to the pan.

Mix well and adjust the consistency as desired.

Boil for 5 minutes.

Add salt to taste.

Add 1/2 tsp pepper powder.

Add 1/4 tsp paprika powder or red chilli powder.

Add 1/2 tsp oregano.

Add 1/2 tsp parsley.

Mix well. You can add 1/4 cup of fresh cream (optional).

Add 1 tsp of lemon juice.

Give a quick mix and switch off.

Keep covered until serving time.
