Place the clementines in a pot and cover them with water.

Bring the water to a simmer. Cover and cook for 1 hour.

Drain the clementines.

Allow the clementines to cool for 20 minutes or until easy to handle.

Preheat the oven to 350F and line an 8-inch springform pan.

Cut the clementines in half and remove any discard any pits.

Add all of the clementines (including skin) to the bowl of a food processor and puree until smooth.

Add the eggs and mix thoroughly.

Add the sugar, baking powder and almond flour and mix on high until well combined, scraping down the sides as needed.

Pour the batter into the prepared pan.

Bake on the middle of the oven for 1 hour, until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool completely.

Garnish with a dollop of Greek yogurt.

Garnish with a twisted clementine slice.

Tips
