Thinly slice chicken breast.

Add soy sauce, sesame oil, cornstarch, and baking soda to the chicken.

Mix well and set aside to marinate.

Combine light soy sauce, dark soy sauce, oyster sauce, sugar, and water in a small bowl for the sauce.

In a separate bowl, mix a teaspoon of cornstarch with a little water to create a slurry.

Set both aside.

Slice carrots and baby corn.

Snap off the end tips and remove the string from the snow peas.

Slice onions.

Cut the white part of spring onions into half, then cut it into 2-inch pieces.

Prepare fresh minced garlic and ginger.

Heat a tablespoon of oil in a pan over medium-high heat.

Add the carrots and baby corn.

Stir-fry for about 30 seconds.

Add the snow peas and sliced onions.

Stir-fry everything together for a minute or so.

Remove the vegetables from the pan and set them aside.

Add a little more oil to the same pan.

Add minced garlic and ginger and sauté for a few seconds until fragrant.

Stir-fry for about 2 to 3 minutes until it's about 80% cooked through.

Pour in the prepared sauce.

Add back the vegetables and also the bean sprouts.

Toss everything to make sure the chicken and veggies are nicely coated.

Add the cornstarch slurry and follow with the spring onions.

Give it a good stir and cook for another minute or so until the sauce is glossy.

Drizzle a bit of sesame oil over the top.

Serve it over a bed of steamed rice or noodles.

3 tbsp water
