Directions

    Chop all the herbs, onion, garlic, and spices in a food processor until very finely chopped.

    Mix the blended herbs, onion, garlic, and spices into the keema.

    Spread the keema mixture evenly between 4 or 5 layers of tortillas.

    Place the layered keema and tortillas in the freezer for about 20 minutes to solidify the structure for cutting.

    Use a sharp knife to cut the layered keema and tortillas into even-sized squares.

    Trim the end of the skewers to fit into the air fryer if necessary.

    Stack the cut keema and tortilla squares onto the skewers, piercing through the middle.

    Place the completed skewers into the air fryer.

    Air fry the skewers for 10 to 12 minutes at 180 degrees Celsius.

    Serve the cooked skewers on a bed of tomato sauce and drizzle with a garlicky yogurt sauce.

    Garnish with a final sprinkle of fresh parsley.

  • 2 tsp chilli flakes
  • 2 tsp chilli powder
  • 2 tsp garam masala
  • 1 tsp cumin
  • Salt
  • Pepper
  • 5 XL tortillas
  • Tomato sauce
  • Garlicky yogurt sauce

Tips

  • To stop keema from shrinking, mix in a tablespoon of flour (not needed for high-quality keema).
  • Freeze the layered keema and tortillas for 20-30 minutes before cutting to get sharp, clean edges.
  • Pan-frying is an alternative to air frying.
