# Cheesy Fiesta Taco Rice

An easy, one-pan cheesy taco rice dinner made with ground beef, beans, corn, and flavorful seasonings.

## Ingredients

- 1 lb ground beef
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 1 whole onion, chopped
- 1 tbsp minced garlic
- 10 oz rotel
- 8 oz tomato sauce
- 10 oz corn, drained
- 10 oz black beans, drained and rinsed
- 1 1/2 cups chicken or beef broth
- 1 cup long grain white rice, uncooked and rinsed
- 2 cups shredded colby jack cheese
- sour cream (optional)
- cilantro (optional)
- pico de gallo (optional)
- taco sauce (optional)

## Instructions

1. Brown ground beef in a skillet over medium-high heat, add all seasonings and the chopped onion.
2. Cook until beef is browned and onions have softened, then drain any excess grease.
3. Add the minced garlic, Rotel, tomato sauce, black beans, corn, broth, and uncooked rice to the skillet.
4. Stir well, cover with a lid, and cook on medium-low heat for 15-20 minutes, stirring once halfway through.
5. Stir in half of the shredded Colby Jack cheese and top with the remaining cheese.
6. Let the cheese melt or place in the oven on broil to finish melting.
7. Serve topped with sour cream, taco sauce, cilantro, pico de gallo, and optional tortilla chips.
