## Ingredients

- 7 Pineapple chunks
- 40 ml Lemon juice
- 30 ml Rich Simple Syrup
- 60 ml Aperol
- 60 ml Gin

- 1 Mint leaves

## Instructions

1. Muddle pineapple chunks with lemon juice and simple syrup.
2. Add Aperol and gin.
3. Add ice and shake.
4. Strain into a glass filled with ice.
5. Garnish with pineapple and mint.
