# Carrot & Pistachio Cake

## Ingredients

- carrot
- oil
- eggs
- sugar
- vanilla extract
- orange zest
- chopped nuts
- dried fruits
- pinch cinnamon
- nutmeg
- flour
- heavy cream
- cream cheese
- powdered sugar
- pistachio paste
- raspberries
- walnuts

## Instructions

1. Start by grating some carrot, then mixing in oil, eggs, and sugar.
2. Add in some vanilla extract then orange zest.
3. Add chopped nuts, dried fruits, and season with a pinch of cinnamon and nutmeg.
4. Add flour and fold in.
5. Add the batter to your cake tins and bake till cooked.
6. While this is cooling down, take some heavy cream and whip this by hand until it's nice and thick.
7. Add in some cream cheese, powdered sugar, and then your pistachio paste, and whisk until smooth.
8. Once your cake has cooled down, pipe the cream on each layer.
9. Top it off with some raspberries and walnuts.
