## Ingredients

- 1.5 cups mezcal
- 1.25 cups freshly squeezed lime juice
- 1.25 cups apple cider
- 1.25 cups smoked cinnamon simple syrup
- 1.25 cups whole milk
- 0.5 cups sugar
- 0.5 cups water
- 2 smoked cinnamon sticks
- ice cubes

## Instructions

1. Combine the freshly squeezed lime juice in a large jar.
2. Add tequila to the jar.
3. Add mezcal to the jar.
4. Add apple cider to the jar.
5. Add smoked cinnamon simple syrup to the jar.
6. Stir the cocktail mixture thoroughly.
7. Pour whole milk into a large bowl.
8. Carefully pour the cocktail mixture from the jar into the bowl with the whole milk.
9. Mix everything together well.
10. Cover the bowl and let it sit at room temperature for about 3 hours to allow the milk to curdle and clarify the cocktail.
11. Set up a fine mesh strainer over an empty bowl, lining the strainer with Konex coffee filters.
12. Carefully pour the milk-cocktail mixture into the prepared strainer. This process will take 6-8 hours for the liquid to fully strain through.

14. Pour the clarified cocktail into a clean jar or bottle for storage.
15. To smoke the glass, light a cinnamon stick with a lighter.
16. Place a chilled glass over the smoking cinnamon stick to infuse it with smoke.
17. Place clear ice cubes into the smoked glass.
18. Pour the clarified smoked apple milk punch over the ice in the smoked glass.
19. Garnish with a smoked cinnamon stick.

## Equipment

- jar
- large bowl
- stirring spoon
- fine mesh strainer
- Konex coffee filters
- lighter
- chilled glass
- cocktail glasses

## Tips

- If you don't like mezcal, you can use double the amount of tequila (3 cups of tequila instead of 1.5 cups tequila and 1.5 cups mezcal).
- Pour the cocktail mixture into the whole milk, not the other way around, for better clarification.
- Allow the mixture to sit at room temperature for at least 3 hours (or anywhere from 30 minutes to an hour per serving of cocktail). For this recipe, it's advised to wait 2.5 to 3 hours.
- The straining process with the coffee filter will take approximately 6-8 hours.
- You can make this drink a week or two in advance and store it in the fridge to save time before hosting a party.
- To make smoked cinnamon simple syrup, combine equal parts sugar and water in a pot. Add 2 smoked cinnamon sticks per 1/2 cup sugar and water. Light the cinnamon sticks on fire carefully and let them burn for about 10 seconds before adding them to the pot. Let it simmer over low heat, stirring occasionally, until the sugar dissolves (about 5 minutes per 1/2 cup). Remove from heat, let it cool completely, and then remove the cinnamon sticks.
