- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp dried oregano
- 1 1/2 tsp rubbed sage
- 1 tbsp brown sugar
- 1 lb ground pork, 90/10
- 1 medium green bell pepper, small dice
- 1 small onion, small dice
- 2 tbsp oil
- 1 pinch salt (optional)
- 2 whole egg
- 2 cup 2% milk
- 1 cup cottage cheese
- 3 cup rolled oats
- 1/2 cup oat flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup shredded cheddar cheese
- garnish fresh parsley, chopped (optional)

## Instructions

1. Mix salt, garlic powder, onion powder, cayenne pepper, paprika, black pepper, oregano, sage, and brown sugar in a large bowl.
2. Add the ground pork to the spice mixture and knead with your hands until the seasonings are well distributed.
3. Heat 1 tablespoon of oil in a skillet over medium-high heat, add the meat, and brown it, breaking it into small pieces. Remove the cooked meat from the skillet.
4. Add the remaining tablespoon of oil to the same skillet and sauté the diced bell pepper and onion with a pinch of salt until browned and softened.
5. In a large bowl, whisk the eggs until smooth, then stir in the milk and cottage cheese.
6. Add the oats, flour, baking powder, and salt to the wet mixture and stir to hydrate.
7. Mix in the cooked sausage, peppers, onions, and shredded cheddar cheese until evenly distributed.
8. Spray a 13x9 casserole dish with oil and spread the mixture evenly inside.
9. Bake at 375°F (190°C) for 40 to 45 minutes or until set in the center. Cover with foil if the top browns too quickly.
10. Garnish with chopped parsley, cool, and cut into 6 slices.

## Tips

- Any ground meat can be used; turkey is a good alternative to pork.
- Add extra vegetables like kale or spinach if desired.
- Oat flour can be replaced with all-purpose flour.
- Check on the oatmeal at the 30-minute mark; cover with foil if the top browns too quickly.
- Refrigerate for up to 5 days, or slice into 5 pieces if you prefer not to keep meals for 6 days.
- You can cut the oatmeal into five pieces or double up one day if you are worried about fridge shelf life.
