- 4 cloves Garlic (chopped or minced)
- 1 tbsp Salt
- 4 tbsp Butter
- Shredded Parmesan Cheese

## Instructions

1. Start by peeling your potatoes.
2. Cut your potatoes into big chunks (2 inches or larger to prevent them from breaking down when boiling).
3. Add salt to a pot of water.
4. Add a teaspoon of baking soda to the pot of water.
5. Add the potato chunks to the pot of water and bring to a boil.
6. While your potatoes are boiling, add a neutral oil of your choice to a baking sheet.
7. Preheat your oven to 425 degrees Fahrenheit with the oiled baking sheet inside.
8. When your potatoes are barely fork tender, drain them in a colander.
9. Give the drained potatoes a good shake to rough up their surface.
10. Let the potatoes steam out and cool in the colander for at least 20 minutes.
11. Finely chop fresh thyme.
12. Finely chop fresh rosemary.
13. Finely chop fresh parsley.
14. Finely chop garlic.
15. Once your potatoes have cooled, carefully add them to your preheated baking dish.
16. Cook the potatoes for 45 minutes to an hour, flipping them every 10-15 minutes.
17. While the potatoes are baking, add chopped herbs, garlic, and salt to melted butter.
18. Mix the herb and garlic butter.
19. Pour the herb and garlic butter over the roasted potatoes.
20. Top with some freshly shredded Parmesan cheese.

- potato peeler
- knife
- cutting board
- baking sheet
- oven
- colander

## Tips

- Baking soda helps create a rough exterior texture for crispiness.
- Shaking the potatoes after draining roughs up the surface for crispiness.
- Steaming the potatoes in the colander removes moisture, which is crucial for crispiness, so do not skip this step.
- Allow the oiled baking dish to preheat in the oven and sit for an additional 10 minutes to reach the correct temperature (oil should be sizzling when potatoes are added).
- Flipping the potatoes every 10 to 15 minutes ensures even crispness.
