## Ingredients

- 1 lb. good quality bacon, sliced
- 2 tbsp. pure maple syrup (not pancake syrup)
- 0.25 c. brown sugar
- 2 tsp. Dijon mustard
- 0.5 tsp. Kosher salt
- 0.25 tsp cayenne pepper

## Instructions

1. Preheat your oven to 350 F.
2. Wrap a rimmed baking sheet with aluminum foil and top with a wire rack.
3. In a large bowl, add the maple syrup, brown sugar, Dijon mustard, Kosher salt, and cayenne pepper.
4. Mix well the maple syrup, brown sugar, Dijon mustard, Kosher salt, and cayenne pepper.
5. Add the bacon to the bowl and toss gently with your hands, ensuring all slices are evenly coated.
6. Place the bacon in a single layer onto the wire rack.
7. Bake in the center of the oven for about 20 minutes.
8. Continue baking for another 10-15 minutes until the bacon is slightly dark (not burnt) and crispy; avoid removing too soon to prevent a chewy texture.
9. Remove from the oven and cool for 5 minutes on the rack; do not let them sit too long to prevent sticking.
10. Once cool enough to handle, you can break the bacon into chards (approximately 32 pieces) or leave them whole.
11. Serve at room temperature.

## Equipment

- oven
- rimmed baking sheet
- aluminum foil
- wire rack
- large bowl

## Tips

- The bacon mixture may seem a bit dry when tossing with glaze ingredients, but this is normal; additional sauce is optional.
- For best results, make and eat the bacon on the same day to prevent the glaze moisture from softening the bacon.
- If storing, place in an airtight container lined with parchment paper, and if stacking, add parchment between layers to prevent sticking.
- If your bacon is not crisping up, try taking it out of the fridge 15 minutes prior to cooking and/or lowering the oven temperature to 300 F and cooking longer.
- If using thick-cut bacon, it may require slightly longer cooking time; monitor closely to avoid burning.
- If you don't have a wire rack, you can use a cookie sheet lined with parchment paper, but the grease will not drain as effectively.
- Honey can be substituted for maple syrup, but it burns faster, so watch the bacon closely and lower the temperature if necessary.
- To clean sticky hardened maple syrup from a pan, place it in a 300 F oven to soften the syrup, then wipe clean when slightly cooled.
