# Italian Wedding Meatball Orzo

## Ingredients

- 1 pound ground beef
- 1 whole egg
- 1/2 cup parmesan cheese, grated
- 1/2 cup whole wheat breadcrumbs
- 1 tbsp milk
- 1 tsp dried basil
- 1 tsp dried parsley
- 1/8 tsp black pepper
- 1/8 tsp salt
- 1 tbsp extra virgin olive oil
- 1 cup carrots, diced
- 1 cup celery, diced
- 1/2 cup yellow onion, diced
- 1 tbsp garlic, minced
- 1 cup frozen spinach
- 1 cup orzo
- 1 tsp dried rosemary
- 1/8 tsp black pepper
- 1/8 tsp red pepper flakes
- 1/8 tsp salt
- 2 cup low sodium chicken stock
- 1/2 cup parmesan cheese, grated
- to taste parmesan cheese (optional)

## Instructions

1. Combine ground beef, egg, breadcrumbs, parmesan cheese, milk, basil, parsley, pepper and salt in a large bowl and mix until combined.
2. Roll the mixture into 1 teaspoon round balls and place on a parchment-lined baking sheet or plate.
3. Heat olive oil in a large sauté pan over medium-high heat.
4. Add meatballs to the pan and cook for 8 minutes until brown on the exterior, stirring occasionally.
5. Remove meatballs from the pan and set aside.
6. Reduce heat to medium and add carrots, celery, onion and garlic to the pan, cooking for 4 minutes until vegetables begin to soften.
7. Add frozen spinach, orzo, rosemary, black pepper, red pepper, and salt to the pan and sauté for 1 minute.
8. Add chicken stock and cooked meatballs, reduce heat to medium-low, and stir to incorporate.
9. Cover and cook for 10 minutes, stirring occasionally to prevent sticking.
10. Remove from heat and stir in the parmesan cheese.
