# Vietnamese Sweet Chilli Sauce

## Ingredients

- 1 sweet pepper
- 1 long red chilli
- 1 bird's-eye chilli
- 1 tomato
- 1 garlic
- 1 salt
- 1 sugar
- 1 vinegar
- 1 water
- 1 rice flour

## Instructions

1. Combine chopped sweet pepper, long red chillies, bird's-eye chillies, tomato, garlic, salt, sugar, vinegar, and water in a container.
2. Use an immersion blender to blend everything together until smooth, leaving some visible pieces of chilli.
3. Pour the mixture into a saucepan, cover, and bring to a boil over medium heat.
4. Simmer for 20 minutes, stirring occasionally.
5. Make a slurry by mixing rice flour (or cornstarch) with a little water.
6. Slowly pour the slurry into the sauce while stirring to thicken it.
7. Bring the sauce back to a gentle boil and simmer for another 10 minutes.
8. Turn off the heat and let the sauce cool completely.
9. Pour the sauce into jars and store in the fridge.
