## Ingredients

- 1/2-1 lb flank steak
- 1 tbsp oyster sauce
- 1/2 tbsp soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1/2 tsp ground black pepper
- 1/4 tsp baking soda
- 2 lb fresh rice noodles, wide cut
- 1/2 tbsp dark soy sauce
- 1/2 lb chinese broccoli, sliced on a bias to 1/4 inch thickness
- 3 whole eggs
- 2 tbsp oyster sauce
- 1 tbsp sweet soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar
- 1/2 tbsp soy sauce
- 1/2 tbsp seasoning sauce
- 1 tsp ground black pepper
- 2-3 tbsp cooking oil

## Instructions

1. Marinate meat with oyster sauce, soy sauce, dark soy sauce, sugar, ground black pepper, and baking soda. Let it sit while preparing other ingredients.
2. Slice Chinese broccoli on a bias to about 1/4 inch thickness.
3. Peel rice noodles, keeping them in long strands, and toss with 1/2 tbsp dark soy sauce.
4. Heat pan to high heat, add cooking oil, and sauté garlic and beef until 90% cooked through.
5. Add noodles to the pan and cook for 2-3 minutes to char.
6. On medium-high heat, scramble eggs until 80% done and toss with noodles and beef.
7. Add Chinese broccoli and sauce, mixing until evenly coated.

## Tips

- Steam Chinese broccoli with a splash of water in the microwave for 1 minute, uncovered, as an optional step.
- Use soy sauce if seasoning sauce is unavailable, though seasoning sauce provides better flavor.
- Try not to break up noodles too much when mixing by scooping and lifting.
